Chefs Yoshihiro & Yukiko Tauchi

Yoshihiro Tauchi is a poetic chef, educator, and master of omakase choreography.

Born in Japan and rooted in the traditions of Edomae sushi, he has spent over three decades shaping the culinary landscape of Virginia. From his early days breaking down tuna in Washington D.C. to leading acclaimed kitchens in Charlottesville, Yoshihiro’s journey is one of quiet resilience and artistic devotion.

His omakase philosophy blends improvisation, seasonal storytelling, and deep emotional connection.

Each course is a moment of presence—a gesture of trust between chef and guest.

Whether torching wagyu or plating uni with reverence, Yoshihiro invites diners into a shared experience that feels both intimate and transcendent.

Yukiko Tauchi, his wife and lifelong collaborator, is the quiet force behind the hospitality. With grace and precision, she guides the flow of service, ensuring every guest feels seen and cared for. Her warmth, intuition, and attention to detail create an atmosphere of calm and welcome, elevating each meal into a memory.

Together, the Tauchis have built more than a restaurant—they’ve cultivated a philosophy of gentle living, artistic integrity, and heartfelt connection.

Their work is not just about sushi—it’s about harmony
